Rattan Shoots are a family of climbing palms belonging to the subfamily Calamoideae used for making furniture, handicrafts etc. There are edible species of rattan shoots used as a vegetable. The outer hard portion of the rattan shoots are used for making furniture whereas the tender core of which can be used as vegetable.

  1. Rattan shoots with Eggplant/Brinjal:

Rattan shoots are a little bitter in taste. People who has affinity for bitter or like to experiment their taste buds should definitely try these shoots. This recipe is from ASSAM, north eastern part of India and is a delicacy of the region.

Preparation Process: Chop some Rattan shoots of desirable size and dice some eggplant/brinjal. Take 1 to 2 chilies, chopped onions,ginger and garlic, turmeric powder 1/3rd tbsp, salt to taste. Now take a pan and add some oil into it. Once heated add the chopped onions and fry it till mild red color appears now add a pinch of turmeric powder and chilies as per spice level. Add in the chopped ginger and garlic and fry for some time then add the chopped shoots and eggplant/brinjal to it. Add salt to taste. Serve it once cooked. This vegetarian recipe is ready.

2. Rattan shoots with potato:

Preparation Process: Chop some shoots and cut potatoes as per requirement. Add in some oil in a frying pan and once heated add chopped onions to it. After the onions turn golden brown add the chopped shoots and potatoes to it. Now add salt as per taste and turmeric powder. You may also add chilies as per taste and dry herbs as per choice. Take it off once cooked.
