Spices as we know gives that extra kick to the taste and India has excelled the art of using spices like no one else in the world. Recipe: Pepper Chicken Dry !
Cuisine: Indian
Duration of Preparation: ~60 minutes
Serves 2-3 people
Ingredients: Chicken 250 gms, Black pepper 3 tbsp, 2-3 green chillies, 1 dry red chilli, Cumin seeds 2 tbsp , 1 daalchini,1 elaichi,1 large onion finely chopped, Ginger -garlic paste 1 tsp,1 tbsp ginger & garlic finely chopped,salt to taste,Kashmiri laal mirch 1 TSP, Coriander powder 1 TSP, cumin powder 1 TSP,1 TSP of kala jeera, turmeric 1/2 tsp,1 lemon to squeeze, 8-12 curry leaves, coriander leaves to garnish , 1 tomato finely chopped.
Method & steps:
Step1: In a pan, dry fry the black pepper seeds, 2 TSP of cumin seeds, daalchini and elaichi (fry it without oil) and then keep it aside for few minutes to cool down. After it cools, grind it in a mixer grinder. It should be like Powder.
Step 2: In the same pan, add oil and let it heat properly in medium flame. Now add the dry red chilli, and kala jeera and saute .Then add the green chillies and onions and ginger garlic paste and chopped garlic and ginger to it and fry it till golden brown. The raw smell of the ginger garlic paste must go off.
Step 3: Now add the chicken pieces into it and saute for few minutes.Then add salt, turmeric powder, Kashmiri laal mirch powder, Coriander powder,cumin powder and saute it for 5 minutes. Keep adding small portion of water in between and saute so that the masala does not get burnt. Add the chopped tomato and saute again till the tomato gets softened. You can cover the lid and let the chicken and the tomato cook properly. Keep adding little portion of water if required.
Step 4: Now add the already prepared black pepper powder into the chicken,and the curry leaves and saute again for more 5-10 minutes . Fry it till the chicken gets cooked properly.
Step 5: Squeeze a lemon and your tasty pepper chicken dry is ready !! Serve it hot .
