Lifestyle has become so adverse that people are now moving to check ages back what kind of food influenced the healthy lifestyle and longevity of our ancestors. Having said that no food is bad and there is no comparison between vegetarian and non vegetarian dishes as both the types has different health building properties but what really matters and brings the change and comparison is how to intake. “How we cook it” is a million dollar question now because the cooking process determines how to get the maximum benefit out of it.
Here I present to you one non vegetarian recipe where you can rediscover your taste buds to this age old recipe. Before I begin to disclose the name of the recipe and the star ingredient let me assure you that over time this non vegetarian recipe will turn out to be in your healthy cook list bucket.
The recipe name is ” Tengamora Murgi Mankho” which is an authentic Assamese recipe of North Eastern part of India. Now let me disclose you the star ingredient which is Tengamora or Gongura/Roselle/ Hibiscus sabdariffa(scientific name); so the name translates to tengamora/gongura/roselle with chicken meat.
Recipe and cooking process:
In Assamese dishes we at least add one vegetable with our non vegetarian dish so that we get the flavors and goodness of both in one dish.
Get some fresh tengamora leaves and wash them and keep them aside. Now marinate the country chicken with only salt and turmeric(the only masala needed). In a pan pour little amount of oil; add freshly chopped ginger, garlic and raw green chilles(spice level as per taste). Saute until it gives a nice aroma. Add the chicken into it and fry it in low flame to 90% cook. Now add the fresh tengamora leaves and fry again. You may add little water and give it a boil if you want to serve it gravy. Your healthy chicken recipe is ready.
